XFCE all the way. Simple and stays out of your way. I am also running the cairo-dock as a dock replacement but it is far from stable currently.
 
I've been keeping from upgrading a little ubuntu server I have because I just haven't had time to sit down and actually test the upgrade in a VM and then go through the mess of replacing gnome3/unity. I've been playing with cinnamon in a VM though and it's been stellar. When I rebuild my server over christmas I'll just take the drives out (/home, essentially) and get a new install going.
