I have over 5 disks i want to chuck into a nicer case. My current is the big lian-li and i'm not diggin its size or noise. What options do I have for a case that's average sized and silent? I'd like a bunch of 3.5" slots (10 or so) and 2x 5.25".

That big Lian Li can be pretty damned quiet if you set it up right. A bit of foam on the metal, rubber washers on the drives and fans, replace the fans with 120mm low-dB fans, get a XP-120 and another low-dB fan. Of course, this won't help with size. Here's a decent-enough case. Do the above modifications to it, and you should be good to go. Take a gander at silentpcreview.com, too.
 
The largest case would probably be the Lian Li V2000 series cases. I find that the area housing the drives are riveted down and flimsy. A lot of installed drives will cause it to vibrate, and what is worse, the noise gets louder and softer every three seconds or so. This is because not all hard drives will spin and thus vibrate at the same exact speed.

Another largish case would be the cube case. It's a very heavy case though, but I found it to have less of a vibration problem than the lian li V2200 I have. It has 6 5.25" bays and room for 8 3.5" hard drives. The drives and power supply are one one side of the case and the motherboard on the other half of the case. It's a popular case for water cooling mods because of the great layout and relatively sturdy chassis.
 
ROFLS at the title.... Server case thats silent... rofls... thats almost a paradox.

Actually, Samsung Spinpoints are the drive of choice for silent operation.
 
i like the idea about adding silent fans. the ones i have in there now probly push more air than a box fan.

where is a good place to snag rubber washers? home depot?

Good catch :p Don't know why I typed Seagate instead of Samsung, but they were quieter back in the 7200.0 days (when AAM wasn't disabled).
 
i've heard bad things about them - go with fans such as Yate-Loon or Panaflo...

Yeah it's doable.
But not in a 1U - 12 X 40mm screamers will drive you bonkers!
I've been working on one for colocation for a while now and I've gotten to where I turn it on only when I'm working on it. And sometimes I remove the top cover and unplug the power to 6 of the fans.
