Not in my experience. Ever since the original Plextor 712SA was available, I've always had SATA CD-Rom drives. Currently, I've got a Plextor 755SA and a Samsung SATA drive in two different machines and I've had no trouble booting from CD with either of them.
I've used SATA optical drives on a number of boards in a number of system configurations without issues. Originally my Intel D915 board had to have a BIOS update to boot from my Plextor 712SA, but that was it. I haven't owned a non-SATA optical drive in at least two years now. You'll be fine.

I was thinking about picking up one of these
I couldn't get the page to display (slow network here) but it's probably the same Samsung drive that's in my secondary machine. If so it's a good buy.

Is this because motherboards are more SATA friendly and have those (I don't want to call them drivers, but they are sort of...I guess) drivers installed on them so they read SATA properly?

It has to do with BIOS support. The BIOS simply has to be able to boot from SATA optical drives. Sometimes this capability isn't tested and issues arise. This isn't typically an issue with higher end or name brand boards.
