It does both infrared and comes with a thermocouple for foods and stuff. Thermoworks is about the best you can buy as well. I have some of their other products and they are very good.
We use those at work for production. These do have a thermocouple as well. Also, with IR guns, the further you are from the target, the wider the spot reading is.
Don't buy a cheap POS, we found that the temps varied wildly. The flukes can also be calibrated which we do in-house as well.
If the flukes are used, find out about the calibration. You can also calibrate it yourself to a known source of heat. I believe you can use ice water with a typical glass thermometer in it.
