Help me explain my performance issues with my macbook

I recently got a 2008-ish mac book (2.16ghz C2D) from a friend after the hard drive had died on him. I quickly zipped off to newegg and bought a seagate 500 GB hybrid hard drive and 3gb of ram for it. I also purchased snow leopard and installed that.

it boots up way faster than any other PC I've owned which is nice, but I'm having a horrible time running simultaneous programs... I'm not sure how to check whats eating my resources (whats the ctrl+alt+delete for mac?). If I'm on the internet and I have itunes playing it gets super choppy and I cant watch a youtube clip without it getting very choppy either.

is it because I'm using chrome?

EDIT: IStat pro reveals that hyperdock, a 3rd party application, is using 60% of my CPU and would explain all the problems I've been having

In Finder go to Applications > Utilities > Activity Monitor

That is the equivalent of Window's Task Manager. Also, if it's a 2.16ghz C2D White MacBook, then it's a Mid 2007 model. You can find the exact manufacture date by plugging your serial number in to http://appleserialnumberinfo.com

How is that hybrid drive working for you? A lot of people have mixed feelings about them.
