I've been using Gmail for a while now, and I have IMAP set up on my iPhone and it works pretty much perfectly. When I send, receive, or delete an e-mail on my iPhone, it gets put in the "Sent Items", "Inbox", and "Trash" folders on the Gmail side.

I recently upgraded to Leopard and used Gmail's instructions to set up my account using Mail (IMAP), and everything works the same way as my iPhone except for deleted mail. When I delete something using Mail, it goes to the Gmail server under the tag 'Deleted Items.' I'd like for it to just go to 'Trash' so that anything I delete will go there, since that's how the Gmail webclient works as does my iPhone.

I've messed with the settings in Mail, such as checking/unchecking both 'move deleted messages to trash' and 'save deleted messages on the server', but neither has worked. The deleted messages are either tagged as 'Deleted Messages' or put in the 'All Mail' folder on Gmail.

I like using Mail; is there any way to correctly do this?

Similar steps must be taken to ensure that any emails sent, saved as drafts, or deleted are properly identified by Gmail’s servers. After completing the IMAP setup steps for Apple Mail, instructing Mail is a few simple clicks away. Once your Gmail IMAP account is added to Mail, you’ll notice your [Gmail account] in the left sidebar.

Highlight ‘[Gmail] Sent Mail’ in the sidebar and select ‘Mailbox’ (menu bar) > ‘Use This Mailbox For’ > ‘Sent’.
Highlight ‘[Gmail] Drafts’ in the sidebar and select ‘Mailbox’ (menu bar) > ‘Use This Mailbox For’ > ‘Drafts’
Highlight ‘[Gmail] Trash’ in the sidebar and select ‘Mailbox’ (menu bar) > ‘Use This Mailbox For’ > ‘Trash’

now correct me if I'm wrong but I thought Gmail was not a IMAP set up but instead was POP3.
 
Holly crap I see that now. I love IMAP accounts more than POP3, good bye Gmail POP3.

Try out Thunderbird. It's IMAP support is great, it's free, and it's faster than Mail. Thunderbird and Firefox are always the first to go on my new systems, no matter what the OS. :)

Thunderbird will let you do exactly what you are trying to do. I do it myself with my home Cyrus/Postfix mail server.
 
id rather use Thunderbird here, but it doesnt have that "contact popup" everytime i start entering a new contact in a new email.

thats whats holding me back, the integration with OSX's addbook
 
I tried following the link up there, but after recreating my account as imap the only things in my sidebar under mailboxs is inbox and sent. Does it import all the labels that are created or do you have to make folders first to match the labels? Same goes for the junk/drafts/trash etc.

edit: AHH ok after like 5 seconds making this post I was playing around with smartmailboxs and gmail showed up.
