Would it be profitable ? I know graphic cards are better but I don't have that good graphic cards here, but I have some CPU cores to spare and they could heat my room (I'm in Canada)

You're looking at about a buck-fiddy a day on the 5950x before power costs according to NiceHash.

A buck a day, it will take many years to compensate for the processor price, maybe I should just sell it now

Generally speaking*, mining is typically never ultra-profitable at the time of mining nor will you usually get a decent return on investment. Mining and holding is where the real moon can be found, however, it's quite the risky adventure.

*Due to the Eth price run up and the year long GPU shortage, it is currently stupid profitable to mine on GPUs. This will last until enough hash power gets added to discourage new investment in mining (or until the price craters).
