I personally would go with the GigaByte board. I've heard that in the past, they had some problems running Corsair's RAM, but I think they've got it ironed out. I have their 8KNXP and it's absolutely rock solid when combined with a gig of level 1 Mushkin.
From the looks of it, it wouldn't be worth your money to upgrade your processor. The 478 Pressies don't run that much faster than you're running your 2.8 at... I would just stick with what you're running now and look at upgrading around the first of next year after Intel releases the 925XE...
I found the best thing to do is the basics on the piece of foam that comes in the mobo box. Your case should have a small speaker in it to connect for the beep codes. Then just slowly start building it on the table, on top of that piece of packing foam. Take your time and I'm sure you'll get it...
