All the ones I've seen so far are either very matte or very glossy. Just wondering if there's anything in-between.

The ASUS ProArt PA27JCV on my desk is fairly matte, but doesn't come across as dull. That might be the best you get; the flip side is a glossy display that's bright enough to overcome reflections.
 
Apples new 5K display with the Nano textured glass option (instead of standard glass) is probably your closest option right now.

Panel coating tends to be factory applied by the panel manufacturer and rarely altered by the display manufacturer, so all the upcoming glossy options will likely all be the same (where using the same panel)
